VIBE
Being in the business of sushi runs in head chef Sotohiro Kosugi’s family, and with such fish-connoisseur pedigree, it makes sense that this is a guy who really understands how to achieve pitch-perfect purity of flavor and presentation. It comes at no surprise, then, that he flies in the finest raw fish from around the world five times a week. It’s also no surprise to find him pacing behind this Zen-like venue’s long blond-wood sushi bar, correcting and perfecting every dish. Design-wise, the stark white surrounds offer little distraction from the inventive sushi.
