    VIBE

    This modestly graceful sushi eatery is split into two rooms. The front houses a gleaming nine-seat sushi bar, where guests are served omakase from classic-style sushi chef Masato Shimizu, a Jewel Bako alum. The back plays home to the rectangular main dining room, whose gray walls and spare, minimalist accents (such as the four grand light fixtures, slate flooring, and lushly cushioned chairs) conjure a calming, serene atmosphere that makes conversation almost sacred. The staff is welcoming yet not intrusive, allowing customers to enjoy the delightful cuisine in a relaxed setting.

    WHY WE LIKE IT

    The chic rooms are a refreshing change from the flashy décor (think samurai swords, garishly bright paper lanterns, geisha outfits) popular in many Japanese venues, and Chef Shimizu really knows what he's doing.

    Shimizu specializes in and prefers the purity and class of simple, raw cuisine. He delights in teaching curious customers about his culinary techniques, often using his own special chart to demonstrate. Reservations for only parties of 3 and under are accepted at the sushi bar.
