In most countries around the world, "Hello, how are you?" is a universal greeting. In China, however, this customary salutation is often immediately followed by another, equally important question: "Have you eaten?" The etiquette of welcoming someone with primary concern for his or her level of hunger should clue you in that eating is a big part of Chinese culture. Make that huge.
Welcome to dining Beijing style, where food is second only to family as the cultural glue. As such, there's a family-style spread at every meal for all to share. In fact, the worst thing possible for a host or hostess is to not have enough food for guests (seriously, a major gaffe). And so, to save face, restaurants typically encourage what amounts to gross over-ordering to avoid this catastrophe. Even if your answer to "Have you eaten yet?" is "Yes," chances are you'll still be presented with the typical lunch/dinner lineup of cold appetizers, soup, vegetable, meat and/or fish, and a noodle or rice dish.
That is, if you're an adventurous expat/tourist who's stumbled into an eatery primarily frequented by locals. At locals' places like Sichuan Provincial Government Restaurant (a state-run joint whose eats are as piquant as the namesake province's peppercorn), Crescent Moon (spicy Uighur kebabs sans belly dancing), and Xiang Man Lou (our go-to for traditional Peking duck), you'll find gargantuan portions, rock-bottom prices, packed-to-the-rafters crowds, and authentic regional flavors that aren't watered down for Western palates. Just know that only minimal English is spoken in such spots–you'll likely have to rely on pointing to menu pictures to indicate what you want. (Don't feel silly–this is totally ok and expected even).
But if you can't quite take the peppery heat and elbow-to-elbow crowds at such simply decorated central Beijing establishments, don't despair. Some of the region's best international fare and most sumptuous settings can be had at restaurants on the city's pastoral outskirts. Take a respite from the constant roar of the megalopolis at Naoki, offering French-Japanese fusion in the soothing surrounds of the Aman at Summer Palace resort or at The Orchard, where organic, locally sourced European fare is dished up at a tranquil village garden estate.
Of course, there's way more to choose from than the dining extremes of spicy/coarse/local and mild/refined/remote. These days, restaurants catering to locals and expats/tourists, respectively, are experiencing a lot of cross-pollination. Take vegetarian wonderland Pure Lotus, for example, which was once a placid Buddhist-inspired eatery but now boasts rocker-chic servers with mohawks. Din Tai Fung, with humble beginnings as a dumpling stand, has become a global chain empire (without sacrificing lipsmackingly good dumpling quality). And the swank surrounds at the Grand Hyatt Beijing's Made in China give Peking duck its special-occasion due.
And speaking of swankiness, though the Beijing dining scene is generally extremely relaxed ambiance-wise, that doesn't mean hotspots aren't to be found. Feast on fusion eats like black sesame veal at ultra-exclusive, avant-garde Green T House, or sup on beancurd with foie gras terrine beneath a koi pond at Whampoa Club. If you're really looking to splash out, try the Singaporean fusion at My Humble House, where rare dishes like the abalone go for a cool RMB 1000. Now that's what we call placing high importance on eating!
